Bacon Pizza

Ingredients:
  • bacon
  • mozzarella cheese
  • string cheese (optional)

Dough:

  • 1 tsp yeast
  • 1/2 tsp brown sugar
  • 1 tsp white sugar
  • 1 1/2 c warm water
  • 3 1/2 c flour
  • 1/3 c olive oil
  • 1 tsp salt
  • 1 tsp sesame oil 
Sauce:
  • 1 (16oz) can tomato paste
  • 1 c water
  • 1/4 c olive oil
  • garlic glove
  • salt+ pepper
  • 1/2 tsp
    • oregano
    • basil
    • sugar
    • parsley
Directions:
  1. Combine all the dough ingredients, in order. Let the dough sit and rise for about an hour.
  2. Combine all sauce ingredients and let it sit for about 20 mins, so the spices absorb.
  3. Cook the bacon on a skillet till it's lightly browned.
  4. Once the dough has risen, roll it out ( make sure you put flour on the table, roller and your hands when you pick it up) and put it on a greased pan. Let some dough hang out of the pan, so you can stuff the crust with string cheese, and roll it up.
  5. Put the sauce on dough, pile on the cheese, according to taste.
     6. Finally, add the toppings of choice, in this case bacon. ( if your bacon is too cooked, you can add it
         before removing the pizza from the oven.
     7. Cook for 20-30 mins on 350.

THE lasagna.

  

Ingredients:

  • 1lb sweet Italian sausage 
  • 3/4 lb group beef
  • 1/2 cup minced onion( which I did not use due to my hate for this vegetable) 
  • 2 crushed garlic cloves
  • 1 (28oz) can crushed tomatoes ( or diced or whatever)
  • 2 ( 6oz) cans tomato paste
  • 2 (6.5 oz) tomato sauce
  • 1/2 cup of water
  • 2 tbsp sugar
  • 1 1/2 tsp basil
  • 2 tsp Italian seasoning 
  • 1 tsp salt
  • some pepper
  • 4 tbsp chopped fresh parsley
  • 12 lasagna noodles
  • 16oz ricotta cheese (+ if you're like me)
  • 1 egg (2 if you like more ricotta cheese mixture)
  • 1/2 tsp salt
  • 3/4 lb mozzarella cheese
  • 3/4 cup parmasean cheese 
  • oil
Directions: ( I split mine in 2, made one half for today and froze the other, since my family is tiny)


  1. In a large pot, stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, Italian seasoning, 1 tbsp salt, pepper, 2 tbsp parsley and a bit oil so it won't stick. Simmer ( COVERED, because it will splash) for 1 1/2 house, stirring. ( but if you don't have that much time, just don't add that much water and simmer away!

    2.   In a large skillet, cook Italian sausage till it's golden. In another skillet, cook ground beef, onions and
          garlic, mixing occasionally. Once both are complete, slice the italian sausage and cook it a little bit more
          with the ground beef mixture. Set aside.

    3.   Bring a pot of salted ( 1 tsp) water to boil. Cook lasagna noodles 8-10 mins, or till ready. Drain and
          rinse with water. 

     4.  In a bowl, combine ricotta cheese, egg, 2 tbsp parsley and 1/2 tsp salt.
     5.  Once all have been cooked, preheat the oven to 350 degrees F.
     6.  Layer the lasagna: 
  • layer 1: meat sauce, noodles, 1/2 mozzarella cheese 
  • layer 2: meat sauce, noodles, ricotta cheese mixture, and parmasean cheese
  • layer 3: meat sauce, noodles, other 1/2 of mozzarella cheese

( I like alot of cheese, so I just pile on till it looks good to me)

    7. Bake for 25mins with sprayed (pam or some butter or oil, so it won't stick) foil. Then remove foil and bake for another 15-20 mins, till it's golden, but not black. Cool and enjoy. 

Banana Crumb muffins


Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda( and 1/2 tsp vinegar poured on the soda to neutralize it)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 1/3 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted (or canola oil)
  • 2/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter
  • 1 tsp. vanilla
  •  ½ tsp nutmeg
  • 1  tsp cinnamon to batter
Directions:


1.     Preheat oven to 350 degrees F. Grease 10 muffin cups, or line with muffin papers.


2.     In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, white sugar and 1/3 c brown sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.


3.   In a small bowl, mix together 1/3 cup brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.




4.     Bake in the oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean or slightly golden.
5.   Decorate according to taste. Makes 10 muffins.
